OVEN BAKED PARCHMENT SALMON WITH AVOCADO SALSA

INGREDIENTS :

1 salmon fillets (1 fillet per person)

1 avocado, cut into small pieces

8 cherry tomatoes, halved

1/2 red onion

1 ripe mango or 6 chunks frozen mango, defrosted

2 tbsp. olive oil

1 tbsp. fresh coriander, chopped

1 tbsp. lime juice

½ tsp. paprika

½ tsp. dried chili flakes

1/2 lemon lemon cut into slices

Sea salt and freshly ground pepper

METHOD :

Preheat the oven to 200 C/180 C fan.

Place the avocado, cherry tomatoes, chopped red onion, chopped mango, chopped coriander, lime juice and 1 tbsp. of olive oil into a bowl. Toss to combine.

Mix the chilli flakes, paprika and 1 tbsp olive oil together in a small bowl. Place the salmon pieces in large sheet of baking parchment and top with the paprika, chilli and oil mix, lemon slices.  Season with a pinch each of salt and pepper. Wrap salmon loosely in the parchment like a parcel and bake for approx 25 minutes.  Carefully unwrap and serve with avocado salsa
