TURKEY BURGERS

INGREDIENTS : 

400g lean turkey mince

100g baby spinach

small handful flat leaf parsley

1/2 small onion, chopped

1 clove garlic, crushed

3 tbsp olive oil

pinch sea salt and pepper

METHOD : 

Lightly blitz the onion, garlic, parsley, spinach, salt and pepper in a food processor with 1 tbsp olive oil.  Retain some texture. Put mix in a large bowl and combine with turkey mince. Shape mixture into 8 patties and put into fridge for at least 20 minutes to firm up. Place a frying pan over a high heat and fry patties in the remaining olive oil until browned on each side. Serve 2 per person with a large mixed green salad and hummus.  Freeze any leftovers.
