ROASTED CAULIFLOWER AND MUSHROOM QUINOA SALAD

Ingredients :

1/2 small cauliflower

225g mushrooms, quartered

125g cooked quinoa ( I use ready cooked Merchant Gourmet)

1 tbsp coconut oil

1/2 teaspoon dried thyme

125g walnuts, chopped

35g feta cheese, crumbled

35 ml balsamic vinegar

Method :

Toss cauliflower, mushrooms and thyme in melted coconut oil and roast on a baking tray in a single layer at 180 C for 20-30 minutes until golden.  Allow to cool.  Mix with cooked quinoa, feta, balsamic and walnuts.  Store in the fridge in an airtight container.
