CRUNCHY CASHEW THAI QUINOA SALAD

Ingredients :

100g cooked quinoa ( I use ready cooked Merchant Gourmet )

250g red cabbage, shredded

1 red bell pepper, chopped

1/2 red onion, diced

1 large carrot, grated

large bunch coriander, chopped

2 spring onions, chopped

60g cashew nuts

120g organic chickpeas

Dresssing :

2 tbsp cashew nut butter

2 tbsp freshly grated ginger

3 tbsp coconut aminos

1 tbsp red wine vinegar

1 tsp avocado oil

1 tsp olive oil

Method :

Place all prepared salad ingredients in a large bowl.  Combine all dressing ingredients in a blender, blend until smooth and add to salad.  Toss and store in the fridge in an air tight container.
