• 3 Cooked chicken fillets
  • 3 stems of celery washed, trimmed and cut into small chunks
  • 3 red apples washed, de-seeded and cut into small chunks
  • 150g unsalted cashew nuts
  • 250g homemade mayo

Mix all the ingredients thoroughly together in a large bowl, cover and store in the fridge for up to 3 days.  Delicious served with toasted sourdough, wholemeal flat bread or homemade corn bread.
