It’s almost time for Summer picnics, garden parties and weekend bbq’s and a time that we’re all guilty of needing to save time and opt for packaged supermarket convenience foods.

Try these veggie crudités with homemade beetroot hummus, perfect with some well chilled homemade lemonade or cocktails, a guaranteed crowd pleaser and packed full of natural goodness!

Beetroot Hummus:
2 x 230g cartons of organic chickpeas
309g home cooked beetroot
Juice of 1 lemon
1 small garlic clove, crushed
1 thumb fresh ginger, chopped
2 tbsp tahini
2 tsp ground cumin
150 ml extra virgin olive oil
1/2 tsp pink Himalayan salt
Chopped parsley to finish

Blitz all ingredients for 3-5 minutes in a food processor until smooth. Store in an airtight container in the fridge for up to a week.
