One of the most simple, quick, nutritious and delicious ideas for a really healthy breakfast –

Chia Pudding made with nut milk and topped with a fruit coulis, extra berries, toasted almonds and a sprinkle of linseed.

Chia seeds are a fantastic source of plant protein (a complete protein) and fibre, are easily digested, gluten free and perfect for breakfast or dessert.


200g chia seed
100ml almond or soya milk
200g fresh or frozen raspberries
1 tbsp maple syrup
50g fresh berries
50g groung almonds
1 tbsp ground linseed


Soak the chia seeds in the nut or soya milk and maple syrup and stir with a fork until completely absorbed. Spoon mixture into smalll serving jars.
Blitz raspberries briefly in a blender or mash to a roughly textured pulp. Add 4 tablespoons to the top of the chia pudding, add extra fresh berries, nuts and linseed. Enjoy!
